Red Velvet Cupcakes

 I've always had a love for anything red velvet 
and have experimented with very many 
red velvet recipes. This recipe, however, has 
to be the best one that I've ever had in my life. 
Makes About 24 cupcakes
Ingredients for the cake:
2½ cups cake flour
1½ cups sugar
1 tsp. baking soda
1 tbsp. cocoa powder
1 tsp. salt
2 large eggs
1½ cups vegetable oil
1 cup buttermilk
2 tbsp. liquid red food coloring
1 tsp. vanilla extract
1 tsp. distilled white vinegar

1. Preheat the oven to 350° F.  Line cupcake pans with paper liners.  
2. In a medium bowl, combine the cake flour, sugar, baking soda, cocoa powder and salt; whisk to blend.  
3. In another bowl, use an electric mixer to combine the eggs, vegetable oil, buttermilk, food coloring, vanilla and vinegar.  Beat on medium speed until well blended.  
4. Mix in the dry ingredients on low speed and beat until smooth, about 2 minutes.
5. Divide the batter evenly between the prepared liners.  Bake for about 18 minutes or until a toothpick inserted in the center comes out clean.  
6. Let cool in the pans for 5 minutes then transfer to a wire rack to cool completely.

Ingredients for the frosting:
8 oz. cream cheese
5 tbsp. unsalted butter, at room temperature
2 tsp. vanilla extract
2½ cups confectioners’ sugar, sifted

1. Combine the cream cheese and butter in the bowl of an electric mixer.  Beat on medium-high speed until well combined and smooth.  
2. Mix in the vanilla extract. 
3. Gradually beat in the confectioners’ sugar until totally incorporated, increase the speed and then beat until smooth.  
4. Frost cooled cupcakes as desired.

They turned out sooo delicious! Happy Weekend!

for only $10. What I love about this one is that it is
soo light which makes it perfect for the 110 degree
weather here in Georgia.

Not Quite Watermelon

Hey guys, I am still alive and keeping. Just been neck deep in wedding planning and other stuff that I completely neglected, but very much missed my blog. Soo much has happened. Well first, I officially have 2 months exactly till the 'I dos' (cue bells and whistles). Wedding planning has been more frustrating than enjoyable and my list of todos keep getting longer :/ . I had a wonderful birthday on the 12th for those who asked. I spent it in Delaware (there is literally nothing in Delaware) and am official in my late 20s...ugh. lol. Um, what else. I've been also doing a lot of gardening lately. I have 5 tomato plants full of fruit that I have no idea what to do with. I've given much away, but am in desperate need of your ideas for tomato recipes. 

It's also been a while since I've taken outfit shots so here are todays. I actually got many compliments on my bright green sweater and told everyone that I was going for a watermelon look today, then I realized that my top was more orange than pink and sweater too bright green....but I like it.

Poppin' Pink

Love that I look a lot taller than 5'4" here. Maybe it is due to the tiny shorts(hey it's hot outside) lol. This weekend has been absolutely aMAZing. I went for my first dress fitting this past friday and the dress was just as gorgeous as I remember it. I can't wait to show you guys the dress in a few months! I also had the chance to start brain storming ideas for ceremony programs and wedding jewelry. So much to do by August 25. Right now I am in the process of packing for a quick trip to Delaware. My cousin graduates on Tuesday and I have never been to Delaware (is there anything in Delaware?lol??) This will be interesting.

I call it the honeycomb necklace. Not sure if it actually looks like a honeycomb but I love it.

" And it's not even my birthday..."

Happy Early Birthday to Me! Actually, it isn't until Next Tuesday, but Fiance got me my first Michael Kors piece for my birthday. I absolutely love it because this makes TWO watches that I now own...yes only two. My wrist is soo tiny that I can never find a watch in store (that doesn't have to be altered) that fits my wrist so I never bother with with most bangles too. They just don't fit me :( However, I got this altered ASAP and I am already in love with the huge watch face. What do you guys think? I think I may go get it in rose gold also.

Cake Cake Cake Cake.....


 So this is what my wedding cake will look like, but each layer will be taller since I need to feed approximately 230 guest. The ribbon I chose is a brighter purple to brighten it up a bit and we will work in some lavender flowers in addition to the dark purple. The bottom layer is Vanilla Genoise/Lemon & Raspberry Mousse. 2nd from bottom: Chocolate Cake/ Chocolate mousse & ganache. 2nd from top: carrot cake/ cream cheese filling. Top: Red Velvet/cream cheese filling. All with Buttercream Icing. How aMAZing is that. I love it.

This is actually what my invitations I made look like on the inside. I designed, printed at home and cut everything myself then purchased the pocket fold from card and pockets.
